This papaya summer mocktail is great for entertaining or just to have all to yourself on a lazy day at home.

Try this great tasting, refreshing and impressive mocktail recipe as a healthy alternative to your usual alcoholic beverage.

Packed with vitamins and you can even enjoy it with the kids!

Serves 4 – Chill 4 glasses

Ingredients:

> 1 large papaya
> 500ml fresh/natural (organic) pineapple juice
> ¼ cup of (organic) coconut cream
> 6 ice cubes
> The juice of half a lime
> Handful of mint leaves and ground nutmeg

Instructions:

Cut papaya in half and spoon out seeds, peel off skin and place into blender.
Place all other ingredients into your blender, whizz for 3 to 4 seconds and serve in chilled glasses with a sprinkle of nutmeg on the top, a wedge of lime on the side of the glass and some fresh mint leaves placed on top.

Serve into cocktail glasses with straws to make it more fun.
